This girl loves muffins! I love enjoying my hot coffee with a little muffin on the side. Muffins get a bad rep in the health industry because they can be loaded with added sugar, well not this recipe!

 

Simple ingredients that are most likely already in your pantry!

 

Why flourless? No specific reason other than it is quick and easy and another way to switch up a muffin recipe.

 

INGREDIENTS:

  • 1 ripe banana
  • 1 egg
  • 1/2 cup natural nut butter
  • 3 tbsp of raw honey
  • 1/4 tsp baking soda
  • Sprinkle of cinnamon
  • 2 tbsp chia-seed (optional)

 

Why add chia-seed? Great way to boost your morning muffin with antioxidants, omega-3, protein, potassium & magnesium, and a great source of fiber!

INSTRUCTIONS:

  1. Preheat oven to 400
  2. Mash your ripe banana in a mixing bowl
  3. Add in your egg, peanut butter, and honey mix it really well
  4. Add in your baking soda and continue to mix
  5. Fold in chia seeds and sprinkle in your cinnamon
  6. bake for 8-10 minutes
