Quick Easy Banana Pancakes

I have always been a pancake lover, but hate putting in all the extra work to make them from scratch. Making this recipe is so easy and quick and the clean up isn't bad either. The beauty of this recipe is the blender does the majority of the work for you which is a win in my book!
Make a few extra to store in the fridge so you can have pancakes multiple times during the week!
INGREDIENTS:
Pancake mix:
- 2 cups old fashioned oats
- 1 egg
- 1 ripe banana
- 1 tsp cinnamon
- 1 cup oat milk or almond milk
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla
- Extra: 1 tbsp chia-seed or flax-seed
- 1/2 cup frozen berries
- 1 tbsp natural nut butter
- 1 tbsp maple syrup
INSTRUCTIONS:
- Blend 2 cups of oats in the blender so it becomes a powder
- Add in all the other ingredients and blend until it is all mixed really well and has a good consistency
- Scoop and pour into a medium sauce pan or griddle to cook
- Heat up frozen berries in microwave or a sauce pan on low heat with maple syrup
- When pancakes are done put your peanut butter on top and pour berries and syrup over top
